In 2015, after 25 years as Technical Director at Bodegas Vega Sicilia where he also crafted Alion, Pintia and Macan, Xavier Ausás left Spain’s most prestigious winemaking post to pursue his own ambitions. Alongside becoming the country’s most sought-after consulting oenologist, he and his wife María Jesús began building a small, personal winery in Quintanilla de Onésimo at the western edge of Ribera del Duero. Having sourced grapes across the region for decades, Xavier knew exactly what he wanted. His aim was to secure the finest fruit and work closely with the growers themselves. He believes that the people behind each grape and their craft are essential to the final wine. He chose five growers and five distinct terroirs across Ribera del Duero so their flavours and personalities would complement one another. This diversity brings layered character to the wines. Light soils add a floral touch, red clay deepens the fruit, altitude gives freshness, and chalky soils contribute structure and tannin.
Ausàs Interpretación is a deep cherry-coloured red wine. On the nose, it stands out for its fruity aromas of sour cherries and blackberries, complemented by notes of dried flowers and a balsamic hint of thyme. On the palate, its entry is tense and juicy, leading to a compact and concentrated sensation. A subtly mature wine that offers a rich and balanced experience. Now a cult wine of Ribera del Duero.
