Back in 2008, visionary entrepreneur Mijndert Pon – founder of Bodegas Salentein and Bodegas Callia – saw the potential in Argentina’s breathtaking Pedernal Valley. So he set up Pyros, the region’s first winery, specialising in high-altitude Malbec and now Chardonnay. Winemaking is far from easy here, but obviously Pon savours the challenge.
Chances are that you haven’t heard of the Pedernal Valley, but Pyros is putting it on the map. The extreme high-altitudes – we’re talking 1,400m above sea level – coupled with a desert-like climate and distinct calcareous soils create a totally unique terroir.
A good accompaniment to salads, starters with fish, white meat, poultry or veal. Also delicious with creamy cheeses.
